Not a typical German 'lager' due its use of top warm fermenting ale yeast followed by the typical lagered cold conditioning.
It is thought that this tradition was started in the middle ages but really developed into a known style in the late 1800s to combat the encroaching popularity of bottom-fermented pale lagers.
Kolsch is an appellation protected by the Kolsch Konvention meaning only 20 breweries from in and around Cologne are allowed to call themselves Kolsch.
The Konvention defines the beer as a "light, highly attenuated, hop-accentuated, clear, top-fermenting Vollbier"
Possibly one of the best lagers to pair with food due to the soft delicate flavour balance between grainy light bready malt, fruity sweetness and delicate medium-low bittering. The Kolsch is light, refreshing and herbal with a crisp dry finish.
